Chocolate Chunk Cornmeal Cookies (gluten free, low sugar, easy)

Hula Hoop Cartwheel Cookies

What would you do with a flaccid hand from a face planted hula hoop cart wheel gone awry, a healthy hand to mix up something weird and hopefully tasty, and a work project to procrastinate finishing? If you were me, you’d definitely have expired food from a health food store to use ASAP and an endless hunger for abnormal cookies. I worked fast and mashed together a gluten free, “reduced” sugar cookie recipe with some all star functionally expired ingredients including stevia, cornflake cereal, and chickpea flour. To help with the inflammation in my hand, I made sure to sprinkle in turmeric (notice jaundice cookie pic).

A food chemist told me yesterday to NEVER microwave your oil or butter in your cookies after doing an experiment to compare fat usage in cookies. Her results showed naturally room temperature butter as creating the fluffiest cookie. These buttery results don’t bode well for anti milk me, so Ill stick to stove warmed coconut oil or goat butter if I am lucky. I dare someone out there to make 2 experiment batches, and let me know if you can taste/see/experience the difference!

May this weird cereal cookie inspire you to use the random (hopefully dumpstered) things you have in your pantry. Click on ingredient links to see the products I recommend for optimum cookie fluff. Next time I never make a recipe like this I will try using less stevia and rather an alternative sugar like honey, medjool dates, or coconut sugar as powdered stevia is gross and too much makes your mouth tingle in an uncool way.

Be sure to disorient yourself before you begin:

Dry ingredients
2 cups Gluten Free Cornmeal Cereal, pulsed into meal with food processor
3/4 cup garbanzo bean flour
2/3 cup stevia baking blend
1 teaspoon pumpkin pie spice
1/4 t. real Salt
1 teaspoon organic turmeric

Wet ingredients
2 whole pasture eggs
1/3 cup cold pressed organic coconut oil
1 t. Organic Vanilla extract
1/4 cup organic coconut milk
1 T. Raw honey
3 oz. 88% chocolate

Preheat oven to 350 degrees
Mix dry ingredients in large bowl
Mix wet ingredients in small bowl
Fold wet ingredients into dry ingredients with spatula
Form into 10 flat cookie dough rounds on greased (with coconut oil on paper towel) pan or Silpat mat on pan
Bake for 15 minutes or better yet, nix all of the aforementioned and do whatever the hell you want

Yields 10 cookies
Per cookie:
209 calories
6.5 grams sugar
