Sweet and Savory Summer Chow

 

Ingredients:

1 local apple
1 medium local cucumber
1/2 cup bell peppers of mixed colors
1/4 cup mango (if you are so lucky, local)
1 cup raw apple cider vinegar
1 Tablespoon raw local honey
1 Tablespoon Real Salt

Directions:

Finely slice apples, cucumbers, mangoes, peppers and cucumbers. The thinner they are sliced, the quicker they will soak up favors. I use a small mandolin I bought inexpensively online.
Toss sliced produce little and add into glass jar
Mix vinegar, salt, and honey in small bowl
Pour sweet and savory vinegar mixture over veggies until all are submerged
Screw on lid and let marinate at least overnight
Add as garnish to salads, pastas, toast, anything you like!
This mix will keep for weeks in airtight container
